Chef Frederick is certified in Culinary Arts, Food Service Management and Supervision, Nutrition, Food Safety and HACCP processes through the American Culinary Federation. Early in his career, he worked as a Sous Chef at the Renaissance Downtown DC Hotel and Executive Chef at the Women’s National Democratic Club. He later worked as an Executive Chef at the Marriott Metro Center Hotel for 7 years. He was the recipient of Marriott’s Service Excellence Award for finance management and food cost improvements. He also received the Leader of the Quarter Award for year-end financial results. Next, he was recruited to be the Executive Chef at Baltimore Country Club, where he revived the culinary program and built a talented culinary team. These improvements resulted in improved quality of food and aided in the growth and retention of the club’s membership. Chef Frederick also worked as an Executive Chef at The Golf Club at South River, where he worked closely with the General Manager and Owner to reimagine the dining facilities, which included investing in outdoor dining, core menu offerings and a POS system upgrade. Most recently he worked as Executive Chef at Rockaway River Country Club and The Tuxedo Club.
